This is so yummy in the morning when you dont have a lot of time to make a filling breakfast. It makes about 2-3 servings, I pack the rest in little to-go's after I devour most of it while hot! :)
You will need:
1 quick-microwave pouch of brown rice (or leftover brown rice from last night's dinner)
1 Egg
1/2 cup milk of your choice + extra for whisking eggs
1 cup frozen blueberries
Squeeze of honey
1Tablespoon Brown Sugar
1 Teaspoon Cinnamon
Toss blueberries, honey and milk into a large saucepan over medium/lower heat. Simmer until the blueberries thaw and slightly thicken.
Stir in your cooked or precooked brown rice, turn up the heat to medium-high.
Whip eggs and a little milk together and add to the pan, stir to combine and flatten the mixture into the pan. Sprinkle cinnamon and brown sugar over the top, let fry for about 1 minute.
Scramble up with your spatula and cook until the rice thickens with the egg and the excess liquid has completely evaporated.
Let cool slightly, then ENJOY!
This is delicious fresh as well as heated up the next morning at work :) This is a great alternative to your morning oatmeal.
